Do not let the words homemade and from scratch scare you. I know you can make homemade from scratch pancakes.

Tips For Pancake Perfection

BATTER, should be lumpy, but pourable.. not runny or thin. Add a little more milk or flour to get the right consistency.

HEAT, unless I am searing something I always use medium heat.. it cooks slow, steady, and even.

BUTTER, some use oil on the pan or griddle, but man there is something about fresh pancakes and butter so I always use butter on mine!

THE FLIP, timing is key watch for the batter to fill with bubbles lots of tiny bubbles.

ADD INS, to insure each pancake gets something extra I always add my mix ins after I pour the pancakes.

Pancakes, 1,2,3,4…

You need 2 bowls, yes I said 2 bowls.

1 for the dry ingredients and 1 for wet.

I know, I know more dishes but trust me it makes a difference on this recipe.

Dump all the dry ingredients in the larger bowl and mix, this will add air to the dry ingredients which helps increase the fluff.

Mix the all of the wet ingredients together be sure the eggs are fully beaten, include the melted butter.

Now make a well (hole) in the dry ingredients and pour in the wet.

Slowly mix together, do not over mix remember you want lumpy batter not thin smooth batter.

Preparing the pan or griddle, be sure to preheat then I take a stick of butter and pen it on one end, then rub the pan or griddle.

Next I like to use an ice cream scoop to make sure my pancakes are about the same size.

Now its time to watch for the batter to bubble.

Then flip and wait 3-4 minutes

Flip again and serve.

Now if your crew is like mine they love their pancakes a little extra!

Mix ins is the way to go, to help insure each pancake gets some I add them right after I pour them.

The favorites at my house are gharedeli chips, rainbow sprinkles, and fresh blueberries!

Are you craving restaurant style pancakes, did you know you can make them at home? Just as fast as using a box mix, shhh don't tell the box mix makers don't want you to know its so easy!

Ingredients

  • 2 cups Flour
  • 2 tablespoons sugar or substitute
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 4 teaspoons baking powder
  • 1 teaspoon cinnamon (can be omitted)
  • 1 ¾ cups milk ( I used almond) or as needed
  • 2 eggs
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla

Instructions

  1. Mix all dry ingredients in one bowl
  2. Mix wet ingredients in a separate bowl
  3. Make a well in the dry ingredients and add in the wet
  4. Mix until slightly lumpy
  5. cook pancakes over medium heat
  6. Flip with batter has lots of tiny bubbles
  7. Cook on each side 3-4 minutes
